FIC 2027: A Shanghai Supplier Visit for Soup and Seasoning Recipes

Plan a Shanghai recipe meeting around FIC to compare soup and seasoning ingredients in the finished food, then clarify grades, use levels and costs.

A spoonful of noodle soup can make an ingredient sound more convincing than its specification sheet. Yet the supplier’s recipe may use a different soup base, dilution or serving temperature from the product your customers will prepare. At FIC 2027, the useful extension for a savoury-food development team is a supplier appointment built around the soup or sauce that its customers will actually use.

Consider arriving a day before the 17–19 March 2027 exhibition at National Exhibition and Convention Center (Shanghai). Ask for a meeting with the colleague who handles your intended food, and agree the tasting setup before adding the day. Decide whether you are buying an ingredient or a ready-made seasoning blend

The organiser’s 2027 notice places domestic flavourings and seasonings in Hall 1.1, while other areas cover natural and functional ingredients, international trade and general products. This supports very different buying tasks within one show. A noodle manufacturer adjusting its existing seasoning may want a particular ingredient; a brand outsourcing recipe development may need a supplier to propose a more complete blend. Decide who will formulate the product before requesting appointments. If your factory’s development team controls the recipe, bring its questions about the ingredient being replaced or added. If the brand wants a finished seasoning, ask who will develop and manufacture that blend, which recipe information will be supplied and how subsequent changes will be agreed. A catalogue of individual inputs does not by itself settle those responsibilities.

Turn AIPU’s application examples into a specific meeting request

The company’s published miso-soup example combines soy sauce powder with disodium succinate, while its instant-food page also shows noodle and other soup applications. Send a recognisable product reference and a concise brief: the intended market, food format, serving method, desired flavour change and the commercial constraint the team is trying to solve. A request to improve a reconstituted soup is more useful than asking to taste everything available. Where the formulation is confidential, agree what information can be shared before sending it. Compare the ingredients in the food your customer prepares

Agree one food base for the appointment and keep the preparation conditions visible. For a dry soup sachet, that includes the amount of powder, water quantity, preparation method and serving temperature. For a cooking sauce, it includes how the sauce is used in the dish. Asking everyone to assess the same prepared food makes differences easier to interpret than comparing unrelated stand demonstrations.

Start from the current recipe or agreed reference. Ask the application colleague to identify what changes between versions and which ingredient code corresponds to each version. If the proposed change concerns savoury taste, record whether colour or another recipe component also changed. Otherwise a preferred sample can be difficult to reproduce even when the purchasing team orders the ingredient named at the meeting.

Separate an ingredient’s use level from the seasoning blend’s use level in the final dish. They may refer to different stages of preparation. Have the supplier state the basis for every proposed figure and ask your food-development team to confirm it in the target product. The meeting’s useful output is the exact recipe stage to which each amount applies.

Before leaving, request the sample codes, agreed preparation instructions and the proposed next sample quantity. Decide which comparisons your own factory or development partner will repeat. A small tasting can help choose the next formulation to investigate; shelf life, production behaviour and consumer acceptance still need work appropriate to the actual product.

Price the usable recipe and check the current product documents

Ask for the exact commercial grade behind each sample and compare cost at the proposed recipe use level, not just the price per kilogram. A cheaper powder used at a higher level can change the ingredient cost of each prepared portion. Keep any development charge, minimum order, sample quantity and production-pack size separate so the first test order is not confused with a full manufacturing commitment.

The specification and supplied label need to describe the same grade being considered. Request the composition and allergen information relevant to your product, traceable sample or batch identification, storage conditions and destination-market documentation. Your food technologist or regulatory adviser should assess permitted uses and the finished product’s labelling; an appealing taste or the supplier’s reference recipe cannot answer those questions.

There is a specific document issue to discuss if caramel colour is part of the enquiry. In a notice dated 25 August 2026, AIPU announced a recall in China’s domestic market of caramel-colour batch 62D110651 because its label did not specify corresponding usage rates for the listed uses. The notice set a recall period of 25 August–24 September 2026. It concerns that batch and label issue, not a recall of all AIPU ingredients. Make the extra day work before FIC

16 March 2027 is a practical date to propose for a pre-show appointment. It lets the team clarify its reference recipe before comparing further ingredient leads on 17–19 March. Confirm the meeting gate and road transfer with the host: East Qibei Road is a separate Shanghai stop, not an extension of the NECC exhibition halls. Allow space around the appointment instead of treating it as a quick gap between stands.

The day after FIC is a Saturday. If an after-show meeting would suit the work better, confirm that the relevant staff can host it before retaining the weekend; otherwise continue with sample dispatch and remote discussion. Waiting in Shanghai simply to keep two business visits on one itinerary adds little value.

This extension is strongest when purchasing and food development can attend together or agree the decisions in advance. For a buyer replenishing an already approved commodity grade, or a distributor seeking a price list without a defined application, a quotation and sample request may be sufficient. The additional day earns its place when the supplier can prepare a comparison that materially improves the next recipe or purchasing decision.
